Begin by heating the water and salt in a pan covered with a lid. While the water is coming to a boil, either peel or scrub the potatoes clean. Carefully place the potatoes in the boiling water using a spoon. Ensure the water just covers the potatoes, adding or removing water as necessary to adjust.
Water Salt Potatoes
Boil covered for about 20 minutes, depending on the type of potato you are using. Test the potatoes with a toothpick toward the end of the boiling time, and stop cooking while the largest potato's center is still firm to prevent overcooking. Drain the water from the pan, holding the lid slightly ajar to keep the potatoes from falling out, and use a towel to protect yourself from the steam.
