Heat the pasta water and add the pasta once the water is boiling. Heat olive oil in a sturdy pot. Sauté the chopped chili, garlic, celery, carrot, and shallots until soft. Then add the salsiccia mince and fry until it browns. Add the tomato paste and let it cook for a while. Add the crushed tomatoes and veal stock, taste and adjust the seasoning. If you desire more garlic flavor, you can add an additional 1-2 cloves of crushed garlic.
