Preheat the oven to 125 degrees C and heat a skillet over high heat. Fry the meat with half of the butter until it is nicely browned all around. Lower the heat to medium and add the rest of the butter. Season with the remaining spices and frequently baste the meat with the fat for a few minutes. Then transfer the meat to an oven-safe dish and insert a meat thermometer so that the tip is as close to the center of the meat as possible. Place the dish with the meat in the middle of the oven.

The roasting time in the oven largely depends on the shape of the meat cut, typically around 60 minutes at an oven temperature of 125 degrees Celsius.
