Begin by preheating pasta water in a large pot, and generously salt it once it starts to boil. Cut the bacon into about 1 cm wide strips and fry in a pan without any added fat. Separate the bacon pieces so that they do not clump together and set aside once the bacon has become sufficiently crispy.

Add the pasta when the water has boiled and cook according to the instructions on the package. Meanwhile, in a bowl, mix together the eggs with most of the grated Parmesan cheese and freshly ground black pepper. Set aside until the pasta is done.

Save about 1 1/4 cups of the pasta water and drain the rest once the pasta is cooked. Then return the pasta to the pot and mix in the bacon along with a bit of the pasta water to prevent the pasta from sticking. Finish by pouring the egg mixture over just before serving. It's important that the pasta isn't too hot at this stage, as the eggs will cook and create a large clump. Thin with more pasta water if needed and season with salt and black pepper.
