Brush off the chanterelles and cut them into appropriately sized pieces. Heat a frying pan or a small saucepan over low to medium heat to slowly release the water from the mushrooms for a few minutes. It helps to cover with a lid as this allows the mushrooms to open more easily and release excess water. Pour off most of the water and set the drained chanterelles aside on a plate.
Chanterelle
Heat a frying pan over medium heat and add the butter to the hot pan. Once the butter has stopped sizzling, add the mushrooms and stir. Allow to cook for a few minutes until they start to sizzle slightly. Stir occasionally. Check to make sure the pan doesn't become too dry; if it does, lower the heat and mix in some more butter. Season with salt and pepper.
