Cook the spaghetti according to the instructions on the package. Use plenty of water and salt generously. Heat a frying pan over medium heat. Dice the pancetta and fry in a dry pan. Meanwhile, chop the garlic.

Add it when the pancetta starts to render fat in the pan and sauté the garlic in it. While the pancetta and garlic are sautéing, whisk together 3 egg yolks and half of the pecorino.

When the spaghetti is al dente, pour the pasta along with the pasta water into the skillet. Turn off the heat. (This is important because otherwise, the eggs will scramble when you add the egg mixture.) Drizzle with olive oil. Add the egg mixture and ensure everything is well combined. Serve with an egg yolk on top & garnish with parsley, the remaining pecorino, and lots of coarsely ground black pepper!
