When the spaghetti is al dente, pour the pasta along with the pasta water into the skillet. Turn off the heat. (This is important because otherwise, the eggs will scramble when you add the egg mixture.) Drizzle with olive oil. Add the egg mixture and ensure everything is well combined. Serve with an egg yolk on top & garnish with parsley, the remaining pecorino, and lots of coarsely ground black pepper!
