Tzatziki is a cold yogurt sauce that is common in Greece, Turkey, and the rest of the Middle East. The base consists of yogurt, cucumber, and garlic, and the sauce can be varied with ingredients like mint or cumin. Finely chop or coarsely grate the cucumber, and squeeze out the water with your hands. Measure the yogurt into a bowl and mix in the cucumber, garlic (crushed, finely chopped, or pressed), and salt.
