Preheat the oven to 392 degrees F (200 degrees C). Slice the bacon strips and lightly fry them in a frying pan. Whisk the flour and eggs together with half of the milk until smooth, then pour in the remaining milk. Peel the potatoes and carrot, then coarsely grate them and add to the pancake batter. Finely slice the leek and stir it into the batter, then season with salt and pepper. Grease a roasting pan and optionally dust with flour, spread the fried bacon in the pan, and finally pour over all the pancake batter so that it forms an even layer.
