Bulgur, base recipe

Bulgur is made from durum wheat kernels that are cracked and prepared to reduce cooking time. There are coarser and finer varieties of bulgur, and they are cooked in essentially the same way. Bring double the amount of water to a boil and serve it as a side dish with meat or fish. There are also many delicious salads where bulgur is mixed with vegetables, often grilled.
