Chiffonade

Chiffonade means "rags," similar to those found in rag rugs, and it's a fitting description. This technique produces thin strips of leafy greens that can be used to top various salads and dishes or as an ingredient in crêpes and omelets. Feel free to try it with basil (as shown here), spinach, or different types of cabbage. Also, check out a short YouTube video for a demonstration.
