Begin by preheating the oven to 225 degrees Celsius. Then, heat a pot with enough water to cover a broken-down cauliflower head and lightly salt the water. Rinse and divide the cauliflower head into suitably sized florets while waiting for the water to boil. Feel free to use the stem as well to reduce food waste.

Place the cauliflower florets in the boiling water and cook, covered, for about 5-7 minutes until the cauliflower is still firm; keep in mind that it will soften further in the oven. BECHAMEL SAUCE Make the simple béchamel sauce while the cauliflower is boiling: Heat a saucepan over medium heat and melt most of the butter until it sizzles without burning (save a little butter to grease the baking dish). Add the flour to the pan and gradually dilute with milk, a little at a time, whisking thoroughly. Let it simmer for a few minutes once all the milk has been added.
