Mix the yogurt with salt, optional garlic, and the finely chopped herbs of your choice. Then place the yogurt mixture in a cheesecloth or a clean towel and tie it up. Place the bundle in a sieve or colander with a bowl underneath.

Take out the yogurt and form even-sized balls using a spoon, then smooth them out with your palms. Place the balls on a plate and, if they have become too soft, optionally chill them in the refrigerator for a while. Then put the balls in a storage container and fill it with olive oil and, if desired, a few sprigs of herbs.
