Small pieces of meat can be saved and frozen to be used as a garnish or topping on otherwise vegetarian dishes. Beef tenderloin is particularly suitable for this purpose, as small bits are often left over from the thinner parts or during the trimming of the larger fillet. Freeze these small pieces and use them in this recipe!
